I just do the basic:

1 stands on each post (usually the best headers), 1 attacking goalkeeper, 1 attacking each posts (usually the attackers), 1 or 2 lurking outside/attack from the edge, and the rest stay back.

One thing to remember: I don't know if it's an error from the game or not, everytime you manually change the players' positioning in current formation, your current set piece setting would change also. And you can't do anything to tweak the set piece in-match. So, be careful, try not to manually move your players around in-match. Instead, just change their roles if you need to, or prepare to save multiple tactics beforehand.
